
Songwriting physician’s garlic pasta


In the kitchen this week is Jennifer (Wylie) Russell, a former Bathurst resident now living in Fredericton.
She's a member of The Cottagers, a musical group performing this Wednesday at 7 p.m. in Bathurst at the St. George's Anglican Church on King Avenue. Whether your taste is Celtic or gospel, this musical evening is for you, says Jennifer.
The Cottagers will be the opening act for the Bathurst CD launch for Christine Crain's newly-released Shine, which was recently nominated for Best Album of the Year in Folk/Grassroots' by the Canadian Gospel Music Association. Meanwhile, ,the only original song on the CD, "His Peace" – written by Jennifer – was nominated for Best Inspirational Song of the Year. ( Jennifer will be going out to Calgary in October for the awards ceremony.)
Jennifer works as a family physician at Canadian Forces Base Gagetown. She penned the song "His Peace" while deployed overseas to the Middle East, where she was away from her family, and dealing with all of the uncertainties and worries associated with a military deployment.
" I was praying for peace. I asked God to take my worries and problems onto His shoulders," recalls Jennifer. "I think the answer to that prayer was this song which came to me shortly after that. I imagined my good friend and talented singer Christine Crain singing it, so when I returned to Canada around Christmas...I...sang it for her and her husband Danny Crain."
Jennifer, the daughter of Len and Susan Wylie, grew up in Bathurst and still enjoys coming to her cottage on Youghall Beach every summer.
The following recipe is a favourite of Jennifer's and her brother, Jamie Wylie. She said it's great for diabetics, vegetarians, low in fat and has lots of flavour
Roasted Red Pepper and Garlic Pasta
INGREDIENTS
1 package grape tomatoes
1 red pepper cubed
8 whole cloves of garlic - peeled
1 tbsp olive oil
Pinch of sugar
bow-tie pasta
parmesan cheese
fresh ground pepper
DIRECTIONS
Preheat oven to 350
Place first five ingredients in casserole dish.
Cook for 1 hour uncovered.
Serve over bow-tie pasta with parmesan cheese and fresh ground pepper
Please note: for a little variation and to add more protein, you can add stir-fried, boneless, skinless chicken.
