Taois tai chi practitioner's family pancakes

In the kitchen this week is Paul Jacques, a Beresford resident who's an active member of the local Taoist Tai Chi Society.

Paul started tai chi "to get me off the couch and get me moving again," but eventually got into the deeper aspects of this ancient Chinese art through ongoing classes and regional and national workshops.

"I was more understanding of how tai chi works on the body, how it improves so many aspects of my health and increases my flexibility," he says.

An intrumentation technician at Chaleur Regional Hospital, Paul and his wife Anne have two children. Besides tai chi, Paul's interests include golf, walking, volleyball, swimming and reading.

Beginners classes in tai chi start Sept. 10 in Petit-Rocher at the Domaine Etudiant school at 7 p.m. and Sept. 11 at the Big River Recreation Centre, also at 7 p.m. You can get further info by calling 783-2926.

For his recipe, Paul's sharing a favourite one from his family's pantry for pancaes.

Pate a Crepe

INGREDIENTS

1 cup flour

1/8 teaspoon salt

3 eggs

2 t baking power

1/8 t baking soda

1 cup milk

DIRECTIONS

Mix all ingredients. Heat frying pan. (If using a non-stick pan, no need to add grease.) Add some mixture to hot pan, amount determined by the size of pancake yoyu want. Cook both sides, flipping over to second side when bubbles appear. Enjoy with your favourite topping. You can also add blueberries or other berries to mixture just before cooking.
