
Pineapple Squares

3/4 cup butter
1/8 cup white sugar
1 1/2 cups flour
540 ml can crushed pineapple
1 1/2 cups icing sugar
1/2 cup butter
2 egg yolks
1 cup whipping cream
2 Tbsp. graham wafer crumbs
Mix well 3/4 cup butter, white sugar and flour and press in 8x8 inch pan. Bake for 20 minutes in 350 degree F oven. Before starting, drain pineapple and squeeze as dry as possible. Mix together icing sugar, 1/2 cup butter and egg yolks. Spread on cooled base. Whip 1 cup whipping cream and fold pineapple in; spread on top. Sprinkle 2 tablespoons graham wafer crumbs on top.
